Processing

Washed & Double Fermented

Using a hand pulper, cherries are pulped and fermented in tiled tanks for 12–24 hours depending on weather. They are then washed and undergo a second fermentation for the same duration — a meticulous process that defines this coffee's clean, structured profile.

Roasting

Probat UG22 · 11 min

Roasted on a 1965-built 22kg Probat UG22, a machine with real character. Total roast time is 11 minutes. After first crack, the coffee rests for 25% of the remaining time. Every bean follows a unique roast profile dialled in to unlock its best flavour.

Origin Story

The Tocto Family & Churupampa

Churupampa is not just a farm — it's a social business model. The Tocto family has been steadily expanding their vision to 30 neighbouring farms in Chirinos, bringing upgrades like improved processing facilities, plant renovation schemes with new varieties, and covered raised-bed drying to ensure stability through seasonal rains.

In 2018, their quality control team cupped around 4,000 samples. Not a single lot goes uncupped. That level of dedication is rare. This coffee is also Organic and Fair Trade certified.
